- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 red chili pepper, sliced (or red pepper flakes to taste)
- 2 cups bok choy, chopped
- 2 tablespoons soy sauce

- 1 tablespoon rice vinegar
- Sesame seeds for garnish
- Green onions, chopped for garnish
Instructions
- Cook the soba noodles according to the package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sliced chili pepper, and sauté for 1-2 minutes until fragrant.
- Add the chopped bok choy and sauté for another 3-4 minutes until wilted.
- Mix together soy sauce, sesame oil, and rice vinegar in a small bowl. Pour over the bok choy mixture and stir to combine.
- Add the cooked soba noodles to the skillet. Toss everything together until the noodles are heated through and evenly coated with the sauce.
- Serve hot, garnished with sesame seeds and chopped green onions.
Notes
Be cautious not to overcook the soba noodles; they should be al dente. Adjust the spice level according to your preference.
