Ingredients

  • 8 all-beef hot dogs
  • 8 soft hot dog buns
  • 1/2 cup sriracha sauce
  • 1/3 cup honey
  • 1 tablespoon smoked paprika
  • 1 teaspoon fresh lime juice
  • 1 cup sharp cheddar cheese slices
  • 1 small red onion, thinly sliced
  • 1 jalapeño, sliced
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the grill to medium-high heat (400°F/200°C).
  2. Grill hot dogs directly over flame for 4-5 minutes per side until the casing is charred but still juicy.
  3. In a medium bowl, whisk together sriracha, honey, smoked paprika, and lime juice to make the firecracker sauce.
  4. Brush hot dogs with sauce during the last 2 minutes of cooking.
  5. Grill buns cut-side down for 1-2 minutes until toasted.
  6. Place cheese slices into the buns during the final 1 minute of grilling to melt.
  7. Add sliced jalapeños and charred red onions to buns, topping with the sriracha-honey sauce and cilantro before serving.
