- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz spaghetti
- 2 cups shredded sharp cheddar cheese
- 1 cup fresh bell peppers (chopped)
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- 1/4 cup green onions (sliced)
Instructions
- Season the chicken breasts with salt and pepper. Cook by boiling in water for 15-20 minutes or baking at 375°F (190°C) for 25-30 minutes until tender. Shred the chicken into bite-sized pieces once cooled.
- In a large pot, boil salted water and cook spaghetti according to package directions until al dente. Drain and rinse with cool water.
- In a large mixing bowl, combine shredded chicken and drained spaghetti. Add cream of chicken soup, chopped bell peppers, paprika, cayenne pepper, and garlic powder. Mix until combined.
- Set aside 1/2 cup of cheddar cheese for topping. Fold remaining 1.5 cups of cheese into chicken and spaghetti mixture.
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish. Transfer mixture to the dish and spread evenly, then sprinkle reserved cheese on top.
- Bake for 20-25 minutes until cheese is melted, bubbly, and golden. Let rest for 5-10 minutes before serving, garnished with sliced green onions.
Notes
For a spicier casserole, increase cayenne pepper to taste. You can also customize this dish with additional veggies or different cheeses.
