- 8 oz pasta (penne or fettuccine)
- 1 lb beef sausage (sliced)
- 1 medium onion (chopped)
- 1 red bell pepper (chopped)
- 2 cloves garlic (minced)
- 1 can diced tomatoes (14.5 oz)
- 1 cup heavy cream
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley (for garnish)
Instructions
- Cook the pasta according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper; sauté until soft.
- Stir in minced garlic and sliced beef sausage; cook until browned.
- Add diced tomatoes (with juice) and Cajun seasoning; simmer for about 5 minutes.
- Pour in heavy cream and mix; let the sauce simmer for an additional 2-3 minutes until slightly thickened.
- Toss the cooked pasta into the skillet, mixing until coated with the sauce.
- Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
Notes
Adjust the spice level of the dish by modifying the amount of Cajun seasoning used.
