Description

Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 lb beef sausage (sliced)
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper; sauté until soft.
  3. Stir in minced garlic and sliced beef sausage; cook until browned.
  4. Add diced tomatoes (with juice) and Cajun seasoning; simmer for about 5 minutes.
  5. Pour in heavy cream and mix; let the sauce simmer for an additional 2-3 minutes until slightly thickened.
  6. Toss the cooked pasta into the skillet, mixing until coated with the sauce.
  7. Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
