A delightful pasta dish combining rich burrata cheese with a spicy tomato sauce that’s bursting with flavor.

- 400 g rigatoni
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 400 g canned diced tomatoes
- 100 ml dry white wine
- 1 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 2 balls burrata cheese
- 10 g fresh basil leaves
Instructions
- Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until it is al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Sauté the chopped onion until it becomes translucent.
- Add the minced garlic and red pepper flakes to the skillet. Cook for about 1 minute until fragrant.
- Stir in the tomato paste and continue cooking for 2 minutes to deepen the flavor.
- Pour in the dry white wine, scraping up any browned bits from the bottom of the skillet. Let it simmer until it reduces by half.
- Next, add the canned diced tomatoes, salt, and black pepper. Let the sauce simmer for about 8-10 minutes until slightly thickened.
- Drain the rigatoni and transfer it to the skillet. Toss the pasta with the spicy tomato sauce to ensure it is well-coated.
- Divide the pasta among serving bowls and place a ball of burrata on top of each serving. Allow the cheese to melt slightly from the heat of the pasta.
- Garnish with fresh basil leaves and serve immediately.
Notes
Feel free to adjust spice levels and use fresh basil for the best flavor.
