Description

A delightful pasta dish combining rich burrata cheese with a spicy and flavorful tomato sauce.


Ingredients

  • 400 g rigatoni
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 400 g canned diced tomatoes
  • 100 ml dry white wine
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 balls burrata cheese
  • 10 g fresh basil leaves

Instructions

  1. Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until it is al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Sauté the chopped onion until it becomes translucent.
  3. Add the minced garlic and red pepper flakes to the skillet. Cook for about 1 minute until fragrant.
  4. Stir in the tomato paste and continue cooking for 2 minutes to deepen the flavor.
  5. Pour in the dry white wine, scraping up any browned bits from the bottom of the skillet. Let it simmer until it reduces by half.
  6. Next, add the canned diced tomatoes, salt, and black pepper. Let the sauce simmer for about 8-10 minutes until slightly thickened.
  7. Drain the rigatoni and transfer it to the skillet. Toss the pasta with the spicy tomato sauce to ensure it is well-coated.
  8. Divide the pasta among serving bowls and place a ball of burrata on top of each serving. Allow the cheese to melt slightly from the heat of the pasta.
  9. Garnish with fresh basil leaves and serve immediately.

Notes

For added flavors, serve with garlic bread or a mixed green salad.
