- 1 lb ground beef
- 1 cup corn (fresh or canned)
- 1 cup cooked rice or quinoa
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a skillet, cook ground beef over medium heat until browned. Add taco seasoning and cook for an additional 2 minutes.
- In a separate pan, roast the corn until slightly charred.
- To assemble the bowls, layer cooked rice or quinoa at the bottom, followed by seasoned beef, roasted corn, black beans, avocado, cherry tomatoes, and cheese.
- Top with sour cream and sprinkle with cilantro. Serve with lime wedges on the side.
