Ingredients

  • 1 cup corn (fresh or canned)
  • 1 cup cooked rice or quinoa
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Add taco seasoning and cook for an additional 2 minutes.
  2. In a separate pan, roast the corn until slightly charred.
  3. To assemble the bowls, layer cooked rice or quinoa at the bottom, followed by seasoned beef, roasted corn, black beans, avocado, cherry tomatoes, and cheese.
  4. Top with sour cream and sprinkle with cilantro. Serve with lime wedges on the side.
