- 2 boneless, skinless chicken breasts
- 4 slices of bacon
- 1 cup shredded cheese (cheddar or pepper jack)
- 2 fresh jalapeños, sliced (remove seeds for less heat)
- 2 tablespoons cream cheese

- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices of crusty bread (like sourdough or ciabatta)
- Optional toppings: lettuce, tomato, and avocado
Instructions
- Prepare the chicken by preheating your oven to 375°F (190°C) and seasoning the chicken breasts with salt, pepper, smoked paprika, and garlic powder.
- Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.
- Sear the chicken breasts in the skillet with leftover bacon grease for about 5 minutes on each side.
- Add cream cheese on top of each chicken breast, followed by jalapeños and crumbled bacon, then sprinkle with shredded cheese.
- Bake in the oven for about 15-20 minutes until cooked through and cheese is bubbly.
- Prepare the bread by toasting slices until golden brown.
- Assemble the melts by placing chicken on toasted bread and adding any desired toppings.
