Ingredients

  • 4 slices of bacon

  • 2 tablespoons mayonnaise

  • Salt and pepper to taste
  • 4 slices of thick-cut bread (like sourdough or brioche)
  • Butter for grilling
  • Optional: fresh lettuce or tomato slices for topping

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, and garlic powder. Flatten slightly for even cooking if desired.
  2. Cook the bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving some grease in the skillet.
  3. Cook the chicken: In the same skillet, add seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  4. Mix the sauce: While the chicken cooks, mix mayonnaise and hot sauce in a small bowl. Adjust hot sauce based on spice preference.
  5. Assemble the sandwich: Spread hot sauce mayo on one side of each slice of bread. Layer cheese, the cooked chicken, crispy bacon, and another slice of cheese. Top with another slice of bread.
  6. Grill the sandwich: Heat butter in the skillet over medium heat. Grill the sandwich until the bread is golden brown, flipping carefully (about 3-4 minutes on each side).
  7. Serve and enjoy: Once cheese is melted and both sides are golden brown, remove from skillet, let cool slightly, slice in half, and serve hot with optional fresh lettuce or tomato slices.
