  • 4 slices of thick-cut bread (sourdough or brioche)

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, and garlic powder. You can flatten them slightly for even cooking if desired.
  2. Cook the bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving some grease in the skillet.
  3. Cook the chicken: In the same skillet, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side until golden brown and cooked through, with an internal temperature of 165°F (75°C).
  4. Mix the sauce: In a small bowl, mix together mayonnaise and hot sauce, adjusting to taste.
  5. Assemble the sandwich: Spread the hot sauce mayo on one side of each slice of bread. Layer cheese, cooked chicken, crispy bacon, and more cheese, then top with another slice of bread.
  6. Grill the sandwich: Heat butter in the skillet over medium heat. Grill the sandwich until golden brown, flipping carefully to avoid spilling contents, about 3-4 minutes on each side.
  7. Serve and enjoy: Once the cheese has melted and bread is golden, remove from skillet, let cool slightly, slice in half, and serve hot with optional fresh lettuce or tomato slices.
