Description

  • 1/2 cup cream cheese (for frosting)
  • 1/4 cup butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the pumpkin puree, egg, and teaspoon of vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. For frosting, beat together the cream cheese, softened butter, vanilla extract, and powdered sugar until smooth.
  9. Once the cookies are cooled, frost them with the cream cheese frosting.

Notes

Make sure to use fresh pumpkin puree and avoid overmixing the dough.
