A healthy twist on traditional hash browns using flavorful spaghetti squash.
Ingredients

- 2 cups leftover cooked spaghetti squash
- 1/2 cup grated onion
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh herbs for garnish (optional)
Instructions
- Combine the spaghetti squash, grated onion, nutritional yeast, salt, and pepper in a large bowl. Mix well until all ingredients are combined.
- Heat olive oil in a large skillet over medium heat.
- Flatten a handful of the mixture into a patty shape and place it in the skillet. Repeat until all mixture is used.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from skillet and drain on paper towels.
- Garnish with fresh herbs if desired and serve warm.
Notes
Use leftover spaghetti squash to save time. Don’t overcrowd the skillet to prevent soggy hash browns. Experiment with seasonings to enhance flavor.
