- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat a generous amount of olive oil over medium heat.
- Add the ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes.
- Add chopped onion, diced bell pepper, and minced garlic. Sauté until tender, about 3-4 minutes.
- Stir in diced sweet potatoes, chili powder, cumin, salt, and pepper. Mix well to coat sweet potatoes.
- Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
- Add black beans and corn. Stir together and cook for an additional 5 minutes until heated through.
- Remove from heat and serve hot, garnished with fresh cilantro if desired.
