Description

A delightful and nutritious one-pan meal combining ground beef, sweet potatoes, and colorful veggies, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat a generous amount of olive oil over medium heat.
  2. Add the ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes.
  3. Add chopped onion, diced bell pepper, and minced garlic. Sauté until tender, about 3-4 minutes.
  4. Stir in diced sweet potatoes, chili powder, cumin, salt, and pepper. Mix well to coat sweet potatoes.
  5. Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Add black beans and corn. Stir together and cook for an additional 5 minutes until heated through.
  7. Remove from heat and serve hot, garnished with fresh cilantro if desired.

Notes

Great served over rice or quinoa, with tortillas, or paired with a light salad.
