- 2 medium sweet potatoes (about 1 pound)
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 pre-made pie crust (9-inch)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the sweet potatoes and poke several holes in each one with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes until tender.
- Let the sweet potatoes cool, peel the skins, and mash until smooth.
- Add the granulated sugar and melted butter to the mashed sweet potatoes and mix well.
- Add the eggs one at a time, blending thoroughly after each addition.
- Pour in the milk, vanilla extract, ground cinnamon, ground nutmeg, and salt, mixing until smooth.
- Pour the filling into the pie crust, spreading evenly.
- Bake at 350°F (175°C) for about 45-50 minutes, until the filling is set and the top is golden brown.
- Allow the pie to cool on a wire rack for at least 2 hours before serving.
Notes
Serve with whipped cream or ice cream for added indulgence. Store leftovers in the refrigerator for 4-5 days or freeze for up to 3 months.
