Description

Ingredients

  • 2 medium sweet potatoes (about 1 pound)
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 pre-made pie crust (9-inch)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sweet potatoes and poke several holes in each one with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes until tender.
  4. Let the sweet potatoes cool, peel the skins, and mash until smooth.
  5. Add the granulated sugar and melted butter to the mashed sweet potatoes and mix well.
  6. Add the eggs one at a time, blending thoroughly after each addition.
  7. Pour in the milk, vanilla extract, ground cinnamon, ground nutmeg, and salt, mixing until smooth.
  8. Pour the filling into the pie crust, spreading evenly.
  9. Bake at 350°F (175°C) for about 45-50 minutes, until the filling is set and the top is golden brown.
  10. Allow the pie to cool on a wire rack for at least 2 hours before serving.

Serve with whipped cream or ice cream for added indulgence. Store leftovers in the refrigerator for 4-5 days or freeze for up to 3 months.
