Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/4 cup honey
  • Butter for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. Combine cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.
  3. Whisk together milk, vegetable oil, eggs, and honey in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill the muffin tin about 2/3 full with the batter.
  6. Bake for 15-20 minutes or until golden and a toothpick comes out clean.
  7. Serve warm with butter.
