Instructions

  1. Prepare the Biscuits: Preheat your oven to 450°F (232°C). In a large mixing bowl, combine the 2 cups of flour, baking powder, and salt. Add the cubed cold butter and mix until the mixture resembles coarse crumbs. Gradually stir in 3/4 cup of buttermilk until the dough comes together.
  2. Shape the Biscuits: Turn the dough onto a floured surface and knead gently a few times. Pat it out to about 1-inch thickness. Cut out biscuits using a round cutter and place them on a baking sheet. Bake for about 12-15 minutes or until they turn golden brown.
  3. Marinate the Chicken: While the biscuits are baking, marinate the chicken thighs in 1 cup of buttermilk for at least 30 minutes. This step will help the chicken stay tender and juicy.
  4. Prepare Breading and Spices: In a shallow bowl, combine 1 cup of flour, paprika, cayenne pepper, garlic powder, onion powder, pepper, and salt. Mix well.
  5. Fry the Chicken: Heat about 1 inch of vegetable oil in a deep skillet or frying pan over medium heat. Remove the chicken from the buttermilk and dredge each piece in the flour mixture. Carefully place the chicken in the hot oil and fry until golden brown, about 5-7 minutes on each side. Ensure the internal temperature reaches 165°F (74°C).
