Description

A hearty and flavorful dish combining smoked sausage and crispy potatoes, perfect for family dinners.


Ingredients

  • 1 lb smoked sausage or kielbasa (sliced into rounds)
  • 45 medium russet potatoes (peeled and diced)
  • 1 small onion (chopped)
  • 1/2 bell pepper (diced, optional)
  • 23 tbsp vegetable oil or bacon grease
  • 1/2 tsp paprika
  • Salt and black pepper (to taste)
  • Optional: garlic powder, cayenne, fresh parsley for garnish

Instructions

  1. Start by peeling and dicing the potatoes into small cubes. Soak them in cold water for 10–15 minutes if you prefer crispier potatoes. Drain and pat dry.
  2. Heat a large skillet over medium heat and add the sliced sausage. Cook until browned (about 5–7 minutes), then remove and set aside.
  3. Add vegetable oil or bacon grease to the skillet. Add the diced potatoes in a single layer and cook without stirring for 5–7 minutes.
  4. Stir gently and add chopped onions and diced bell peppers, if using. Season with salt, black pepper, and paprika. Cook for another 10–15 minutes until the potatoes are tender and golden.
  5. Return cooked sausage to the skillet and stir everything together. Let it cook for another 2–3 minutes to heat the sausage through.
  6. Serve hot, garnished with fresh chopped parsley or with hot sauce or ketchup on the side.

Notes

For added flavor, feel free to customize with different vegetables or spices. Pair well with green salad or cornbread.
