Description

These Soft Italian Christmas Cookies are simple and light, melting in your mouth and perfect for any holiday plate.


Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 cup butter, softened
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the butter mixture until well blended.
  5. Drop spoonfuls of dough onto ungreased baking sheets.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Let cookies cool on wire racks. Optionally, drizzle with a festive glaze before serving.

Notes

For even cookies, use a small cookie scoop. For very soft centers, take the cookies out when the edges turn golden.
