Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together flour, ground ginger, cinnamon, ground cloves, nutmeg, baking soda, and salt; set aside.
- Cream together softened butter and brown sugar until light and fluffy.
- Add the large egg, egg yolk, and vanilla extract, mixing until combined.
- Stir in the molasses until fully combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Roll dough into small balls and coat with granulated sugar, placing them on the prepared baking sheet.
- Bake for 10-12 minutes, until edges are set and centers are soft.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Once cooled, fill the cookies with your favorite frosting to create the sandwich effect.
