Description

  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract

  • â…“ cup granulated or turbinado sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, ground ginger, cinnamon, ground cloves, nutmeg, baking soda, and salt; set aside.
  3. Cream together softened butter and brown sugar until light and fluffy.
  4. Add the large egg, egg yolk, and vanilla extract, mixing until combined.
  5. Stir in the molasses until fully combined.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  7. Roll dough into small balls and coat with granulated sugar, placing them on the prepared baking sheet.
  8. Bake for 10-12 minutes, until edges are set and centers are soft.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. Once cooled, fill the cookies with your favorite frosting to create the sandwich effect.
