Description

Deliciously soft and chewy cookies packed with peanut butter and oats, perfect for any occasion.


Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups quick oats
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ cup toffee pieces (optional)
  • Sea salt, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter, creamy peanut butter, brown sugar, and granulated sugar. Mix until blended.
  3. Stir in the egg and vanilla extract until fully incorporated.
  4. Add the quick oats, flour, salt, and baking soda. Mix until a thick cookie dough forms.
  5. If using, gently fold in the toffee pieces.
  6. Scoop out 2-tablespoon-sized amounts of dough and space them about 2 inches apart on the baking sheet.
  7. Bake for about 9 minutes, until edges are golden but centers are still soft.
  8. Sprinkle lightly with sea salt as soon as they come out of the oven.
  9. Let cool on the pan for about 10 minutes before transferring to a wire rack.

Notes

Avoid overmixing the dough for softer cookies. Store in an airtight container for up to a week or freeze for longer storage.
