- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup brown sugar
- ⅓ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups quick oats
- ½ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- ¼ cup toffee pieces (optional)
- Sea salt, for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the softened butter, creamy peanut butter, brown sugar, and granulated sugar. Mix until blended.
- Stir in the egg and vanilla extract until fully incorporated.
- Add the quick oats, flour, salt, and baking soda. Mix until a thick cookie dough forms.
- If using, gently fold in the toffee pieces.
- Scoop out 2-tablespoon-sized amounts of dough and space them about 2 inches apart on the baking sheet.
- Bake for about 9 minutes, until edges are golden but centers are still soft.
- Sprinkle lightly with sea salt as soon as they come out of the oven.
- Let cool on the pan for about 10 minutes before transferring to a wire rack.
Notes
Avoid overmixing the dough for softer cookies. Store in an airtight container for up to a week or freeze for longer storage.
