- 800g Peeled & Diced Potatoes
- 1 Tsp Salt
- 1 Tsp Garlic Powder
- 1 Tsp Oregano
- 1.5 Tsp Smoked Paprika
- 800g Extra Lean Beef Mince
- 35g Tomato Paste
- 1 Diced Tomato
- 1 Diced Jalapeño
- 1/2 Diced Red Onion
- 1/2 Lime Juice
- Cilantro/Coriander
- 30g Sriracha Mayonnaise
- 1 Tsp Black Pepper
- 1/2 Tsp Cumin
- 1 Tsp Onion & Garlic Powder
- 1 Tsp Chilli Powder
- 1/2 Tsp Chilli Flakes
Instructions
- Begin by seasoning the diced potatoes. In a bowl, mix the potatoes with salt, garlic powder, oregano, and smoked paprika until they are well coated.
- Cook the seasoned potatoes in a large skillet over medium heat. Stir occasionally and cook until they are tender.
- Brown the beef mince in another pan over medium-high heat until fully cooked, breaking it apart as it cooks.
- Add the tomato paste, diced tomato, jalapeño, and red onion to the beef. Sprinkle in the taco seasoning (black pepper, cumin, onion & garlic powder, chilli powder, and chilli flakes). Stir well and cook for about 5 minutes.
- Squeeze lime juice over the mixture and fold in the chopped cilantro.
- Assemble the tacos by filling taco shells with the beef and potato mixture. Drizzle with sriracha mayonnaise and add extra cilantro if desired.
Notes
Avoid overcooking the potatoes to keep them firm. Customize spiciness to your preference.
