- 1 pound smoked sausage (sliced)
- 1 cup long-grain rice
- 2 cups chicken broth (or water)
- 1 bell pepper (diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: chopped parsley for garnish
Instructions
- In a large pot or skillet, heat olive oil over medium heat.
- Add the sliced smoked sausage and cook for about 5 minutes, until browned.
- Stir in the chopped onion, bell pepper, and minced garlic; cook for another 3-4 minutes.
- Sprinkle in the paprika, salt, and pepper; mix well.
- Pour in the rice and chicken broth (or water); stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice is cooked.
- Fluff the rice with a fork, and if desired, sprinkle chopped parsley on top for garnish.
- Serve hot and enjoy!
