Description

Ingredients

  • 1 pound smoked sausage (sliced)
  • 1 cup long-grain rice
  • 2 cups chicken broth (or water)
  • 1 bell pepper (diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions

  1. In a large pot or skillet, heat olive oil over medium heat.
  2. Add the sliced smoked sausage and cook for about 5 minutes, until browned.
  3. Stir in the chopped onion, bell pepper, and minced garlic; cook for another 3-4 minutes.
  4. Sprinkle in the paprika, salt, and pepper; mix well.
  5. Pour in the rice and chicken broth (or water); stir to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice is cooked.
  7. Fluff the rice with a fork, and if desired, sprinkle chopped parsley on top for garnish.
