Description

A delightful one-pot meal featuring smoked sausage, colorful veggies, and melted cheese, perfect for family dinners or potlucks.


Ingredients

  • 1 pound smoked sausage (kielbasa or bratwurst)
  • 1 medium onion, diced
  • 2 bell peppers, diced (red and yellow for color)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 cup shredded cheddar cheese
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Slice the smoked sausage into bite-sized pieces. Dice the onion and bell peppers.
  2. In a large skillet over medium heat, add olive oil. Once hot, add diced onions and bell peppers. Sauté for about 5 minutes until soft.
  3. Add the chopped sausage to the skillet and cook until golden brown.
  4. Stir in the diced tomatoes (with juice), rice, garlic powder, paprika, salt, and pepper. Mix well.
  5. Pour in the chicken broth or water until covered. Bring to a boil, then reduce heat to low. Cover and simmer for about 25 minutes, until rice is tender.
  6. Once cooked, sprinkle shredded cheddar cheese on top. Cover until cheese is melted. Serve hot.
