- 1 pound smoked sausage (kielbasa or bratwurst)
- 1 medium onion, diced
- 2 bell peppers, diced (red and yellow for color)
- 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
- 1 cup long-grain rice
- 2 cups chicken broth or water
- 1 cup shredded cheddar cheese
- 2 tsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Slice the smoked sausage into bite-sized pieces. Dice the onion and bell peppers.
- In a large skillet over medium heat, add olive oil. Once hot, add diced onions and bell peppers. Sauté for about 5 minutes until soft.
- Add the chopped sausage to the skillet and cook until golden brown.
- Stir in the diced tomatoes (with juice), rice, garlic powder, paprika, salt, and pepper. Mix well.
- Pour in the chicken broth or water until covered. Bring to a boil, then reduce heat to low. Cover and simmer for about 25 minutes, until rice is tender.
- Once cooked, sprinkle shredded cheddar cheese on top. Cover until cheese is melted. Serve hot.
