A hearty smoked sausage casserole filled with smoky sausage, colorful vegetables, and creamy cheese, perfect for busy weeknights or cozy dinners.

- 1 pound smoked sausage (kielbasa or bratwurst)
- 1 medium onion, diced
- 2 bell peppers, diced (red and yellow)
- 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
- 1 cup long-grain rice
- 2 cups chicken broth or water
- 1 cup shredded cheddar cheese
- 2 tsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Slice the smoked sausage into bite-sized pieces, and dice the onion and bell peppers.
- In a large skillet over medium heat, heat the olive oil. Add the onions and bell peppers; sauté for about 5 minutes until soft.
- Add the chopped sausage to the skillet and cook until it’s golden brown.
- Stir in the diced tomatoes (with juice), rice, garlic powder, paprika, salt, and pepper. Mix everything well.
- Pour in chicken broth or water until everything is covered. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 minutes until the rice is tender.
- Sprinkle the shredded cheese on top. Cover again until melted, then serve hot.
Notes
For added flavor, use fire-roasted tomatoes. Watch the liquid and add more broth if needed.
