Description

A hearty smoked sausage casserole filled with smoky sausage, colorful vegetables, and creamy cheese, perfect for busy weeknights or cozy dinners.


Ingredients

  • 1 pound smoked sausage (kielbasa or bratwurst)
  • 1 medium onion, diced
  • 2 bell peppers, diced (red and yellow)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 cup shredded cheddar cheese
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Slice the smoked sausage into bite-sized pieces, and dice the onion and bell peppers.
  2. In a large skillet over medium heat, heat the olive oil. Add the onions and bell peppers; sauté for about 5 minutes until soft.
  3. Add the chopped sausage to the skillet and cook until it’s golden brown.
  4. Stir in the diced tomatoes (with juice), rice, garlic powder, paprika, salt, and pepper. Mix everything well.
  5. Pour in chicken broth or water until everything is covered. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 minutes until the rice is tender.
  6. Sprinkle the shredded cheese on top. Cover again until melted, then serve hot.

Notes

For added flavor, use fire-roasted tomatoes. Watch the liquid and add more broth if needed.
