Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the diced potatoes, chopped onion, and diced bell pepper.
- Drizzle the olive oil over the vegetables and toss to coat.
- Sprinkle the garlic powder, paprika, salt, and pepper over the mixture, then toss again to ensure everything is well coated.
- Add the sliced smoked sausage to the bowl and mix it in with the vegetables.
- Transfer the mixture to a large baking dish, spreading it out evenly.
- Bake in the preheated oven for about 45 minutes, or until the potatoes are fork-tender and the sausage is heated through, stirring halfway through.
- Once baked, remove the dish from the oven and let it cool for a few minutes.
- Garnish with fresh parsley before serving.
