Ingredients

Scale
  • 2 pounds baby potatoes
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  3. Place the potatoes on a baking sheet and gently smash each potato with a fork or the palm of your hand.
  4. Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and rosemary.
  5. Bake for 20-25 minutes or until crispy and golden.
  6. Remove from the oven and top with crumbled feta cheese before serving.

Notes

For extra flavor, consider adding minced garlic before baking or use different herbs if rosemary is unavailable.
