Description

Easy and flavorful slow cooker teriyaki meatballs, perfect for a busy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Combine ground beef, breadcrumbs, egg, minced garlic, ground ginger, salt, black pepper, and chopped green onions in a large bowl.
  2. Roll this mixture into 1-inch meatballs.
  3. Optional: Sear meatballs in a skillet over medium heat for 2 to 3 minutes on each side if desired.
  4. Whisk together soy sauce, honey, brown sugar, rice vinegar, minced garlic, and ground ginger in a separate bowl.
  5. Pour the sauce into the slow cooker.
  6. Place the rolled meatballs into the slow cooker and coat them with the sauce.
  7. Cover the slow cooker and cook on LOW for 4 hours or HIGH for 2 hours.
  8. Mix cornstarch and water to create a slurry during the last 15 minutes of cooking.
  9. Stir the slurry into the slow cooker to thicken the sauce and continue cooking.
  10. Garnish meatballs with sesame seeds and green onions before serving.

Notes

For storage, keep the meatballs in an airtight container for up to 3-4 days in the refrigerator or freeze for 2-3 months.
