- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Combine ground beef, breadcrumbs, egg, minced garlic, ground ginger, salt, black pepper, and chopped green onions in a large bowl.
- Roll this mixture into 1-inch meatballs.
- Optional: Sear meatballs in a skillet over medium heat for 2 to 3 minutes on each side if desired.
- Whisk together soy sauce, honey, brown sugar, rice vinegar, minced garlic, and ground ginger in a separate bowl.
- Pour the sauce into the slow cooker.
- Place the rolled meatballs into the slow cooker and coat them with the sauce.
- Cover the slow cooker and cook on LOW for 4 hours or HIGH for 2 hours.
- Mix cornstarch and water to create a slurry during the last 15 minutes of cooking.
- Stir the slurry into the slow cooker to thicken the sauce and continue cooking.
- Garnish meatballs with sesame seeds and green onions before serving.
Notes
For storage, keep the meatballs in an airtight container for up to 3-4 days in the refrigerator or freeze for 2-3 months.
