- 1 lb Ground beef (browned and drained)
- 1 Medium onion (diced)
- 3 Bell peppers (diced, any colors)
- 2 cups Beef broth
- 14.5 oz Petite diced tomatoes (1 can)
- 14.5 oz Tomato sauce (1 can)
- 2 teaspoons Granulated garlic (divided)
- 1 teaspoon Parsley
- 1/2 teaspoon Salt
- 2 cups Cooked white rice (use 1 cup if you prefer less rice)
Instructions
- Brown the ground beef in a skillet over medium heat, then drain any excess fat.
- Prepare the medium onion and bell peppers by dicing them into small pieces.
- Combine the browned beef, diced onion, and diced bell peppers in your slow cooker.
- Add the beef broth, petite diced tomatoes (with juice), and tomato sauce.
- Season the soup with granulated garlic, parsley, and salt, then stir to combine.
- Cook on low for 6-8 hours or high for about 4 hours.
- Add cooked white rice and remaining granulated garlic in the last 30 minutes of cooking.
- Serve warm after a final stir.
