Ingredients

  • 1 lb Ground beef (browned and drained)
  • 1 Medium onion (diced)
  • 3 Bell peppers (diced, any colors)
  • 2 cups Beef broth
  • 14.5 oz Petite diced tomatoes (1 can)
  • 14.5 oz Tomato sauce (1 can)
  • 2 teaspoons Granulated garlic (divided)
  • 1 teaspoon Parsley
  • 1/2 teaspoon Salt
  • 2 cups Cooked white rice (use 1 cup if you prefer less rice)

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain any excess fat.
  2. Prepare the medium onion and bell peppers by dicing them into small pieces.
  3. Combine the browned beef, diced onion, and diced bell peppers in your slow cooker.
  4. Add the beef broth, petite diced tomatoes (with juice), and tomato sauce.
  5. Season the soup with granulated garlic, parsley, and salt, then stir to combine.
  6. Cook on low for 6-8 hours or high for about 4 hours.
  7. Add cooked white rice and remaining granulated garlic in the last 30 minutes of cooking.
  8. Serve warm after a final stir.
