- 1 pound boneless chicken breasts or thighs
- 2 cups corn (fresh, frozen, or canned)
- 4 oz cream cheese (softened)
- 1/3 cup Cotija cheese (crumbled)
- 1 lime (juiced)
- 2 cloves garlic (minced)
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- Fresh cilantro (for garnish, optional)
- 1/4 cup chicken broth (optional)
Instructions
- Prepare the Chicken: Place the chicken in a single layer at the bottom of your slow cooker.
- Layer the Ingredients: Layer corn, cream cheese, Cotija cheese, lime juice, garlic, chili powder, paprika, and onion powder on top of the chicken. Do not stir.
- Cooking Time: Cover the slow cooker, and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
- Shred the Chicken: After cooking, shred the chicken in the pot with two forks.
- Adjust Consistency: If needed, add chicken broth for a thinner consistency.
- Serve: Garnish with cilantro if desired and serve.
Notes
For variety, serve over rice, in tacos, or mix with pasta. Store leftovers in an airtight container for 3 to 4 days.
