Ingredients

  • 1 pound boneless chicken breasts or thighs
  • 2 cups corn (fresh, frozen, or canned)
  • 4 oz cream cheese (softened)
  • 1/3 cup Cotija cheese (crumbled)
  • 1 lime (juiced)
  • 2 cloves garlic (minced)
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • Fresh cilantro (for garnish, optional)
  • 1/4 cup chicken broth (optional)

Instructions

  1. Prepare the Chicken: Place the chicken in a single layer at the bottom of your slow cooker.
  2. Layer the Ingredients: Layer corn, cream cheese, Cotija cheese, lime juice, garlic, chili powder, paprika, and onion powder on top of the chicken. Do not stir.
  3. Cooking Time: Cover the slow cooker, and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
  4. Shred the Chicken: After cooking, shred the chicken in the pot with two forks.
  5. Adjust Consistency: If needed, add chicken broth for a thinner consistency.
  6. Serve: Garnish with cilantro if desired and serve.
