- 1 lb chicken breasts
- 1 can (15 oz) corn, drained
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, mix the corn, cream cheese, cheddar cheese, chili powder, garlic powder, onion powder, cumin, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
- Shred the chicken and stir to combine with the sauce.
- Serve garnished with fresh cilantro and enjoy!
Notes
Don’t overcook to avoid dry chicken. Can use low-fat cream cheese for a lighter version.
