Description

A delightful dish that combines the flavors of street corn with tender chicken, all prepared effortlessly in a slow cooker.


Ingredients

  • 1 lb chicken breasts
  • 1 can (15 oz) corn, drained
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, mix the corn, cream cheese, cheddar cheese, chili powder, garlic powder, onion powder, cumin, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
  5. Shred the chicken and stir to combine with the sauce.
  6. Serve garnished with fresh cilantro and enjoy!

Notes

Don’t overcook to avoid dry chicken. Can use low-fat cream cheese for a lighter version.
