Description

A delicious and comforting casserole featuring kielbasa sausage, creamy potatoes, and melted cheddar cheese, cooked effortlessly in a slow cooker.


Ingredients

  • 1 – 32 oz. bag of hash browns (or fresh diced potatoes)
  • 14 oz. kielbasa sausage (cut into small pieces)
  • 1 small onion (diced)
  • 2 1/2 cups shredded cheddar cheese
  • 10.5 oz can cream of mushroom soup
  • 1/2 cup sour cream
  • 1 tsp creole seasoning (or your favorite blend)
  • Salt and pepper to taste

Instructions

  1. Grease the inside of your slow cooker.
  2. In the slow cooker, mix the hash browns, kielbasa sausage, diced onion, and 2 cups of shredded cheddar cheese.
  3. In a separate bowl, stir together the cream of mushroom soup, sour cream, creole seasoning, salt, and pepper.
  4. Pour the sauce mixture over the contents of the slow cooker and stir to combine.
  5. Sprinkle the remaining cheddar cheese over the top.
  6. Cook on low for 6 hours or on high for 4 hours, until the potatoes and onions are cooked through.
  7. Serve hot and enjoy!

Notes

For a vegetarian version, replace kielbasa with a meat substitute or add your favorite vegetables. Monitor the cooking time closely to avoid mushy potatoes.
