A delicious and comforting casserole featuring kielbasa sausage, creamy potatoes, and melted cheddar cheese, cooked effortlessly in a slow cooker.

- 1 – 32 oz. bag of hash browns (or fresh diced potatoes)
- 14 oz. kielbasa sausage (cut into small pieces)
- 1 small onion (diced)
- 2 1/2 cups shredded cheddar cheese
- 10.5 oz can cream of mushroom soup
- 1/2 cup sour cream
- 1 tsp creole seasoning (or your favorite blend)
- Salt and pepper to taste
Instructions
- Grease the inside of your slow cooker.
- In the slow cooker, mix the hash browns, kielbasa sausage, diced onion, and 2 cups of shredded cheddar cheese.
- In a separate bowl, stir together the cream of mushroom soup, sour cream, creole seasoning, salt, and pepper.
- Pour the sauce mixture over the contents of the slow cooker and stir to combine.
- Sprinkle the remaining cheddar cheese over the top.
- Cook on low for 6 hours or on high for 4 hours, until the potatoes and onions are cooked through.
- Serve hot and enjoy!
Notes
For a vegetarian version, replace kielbasa with a meat substitute or add your favorite vegetables. Monitor the cooking time closely to avoid mushy potatoes.
