Description

A hearty Slow Cooker Roast Beef Dinner featuring tender beef and fresh vegetables, perfect for busy weeknights or family gatherings.


Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 large carrots, peeled and cut into 2-inch pieces
  • 4 medium potatoes, peeled and cut into quarters
  • 1 large onion, quartered
  • 2 cloves garlic, minced
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the beef chuck roast dry with paper towels.
  2. Mix salt, black pepper, garlic powder, onion powder, thyme, and rosemary in a small bowl.
  3. Rub the spice mixture all over the beef roast.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the roast for about 4-5 minutes on each side.
  5. Remove the roast from the skillet and set aside.
  6. Prepare the vegetables by peeling and cutting the carrots, potatoes, and onion. Mince the garlic.
  7. Layer the carrots, potatoes, and onion in the slow cooker. Sprinkle minced garlic on top.
  8. Place the seared beef roast over the vegetables.
  9. Combine beef broth and Worcestershire sauce in a bowl and pour over the roast and vegetables.
  10. Cover the slow cooker and set to cook on low for 8-10 hours or on high for 4-6 hours.
  11. Check the internal temperature of the roast when done; it should be at least 145°F (63°C).
  12. Let the roast rest for 10-15 minutes before slicing.
  13. Check the vegetables and add frozen peas in the last 5 minutes of cooking if desired.
  14. Slice the roast and serve with vegetables and broth, garnished with fresh parsley.

Notes

For an added depth of flavor, do not skip searing the roast. Ensure sufficient space in the slow cooker for even cooking.
