Ingredients

  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 1 cup beef broth
  • 1 tablespoon cornstarch (optional, for thickening)
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Combine soy sauce, brown sugar, gochujang, garlic, ginger, sesame oil, and beef broth in a slow cooker.
  2. Add the beef chuck roast, ensuring it is well coated in the sauce.
  3. Cover and cook on low for 360-480 minutes (6-8 hours) or until the beef is tender and easily shreds with a fork.
  4. If you want a thicker sauce, mix cornstarch with a little water to form a slurry and stir it into the slow cooker, then cook for an additional 30 minutes.
  5. Serve the beef over rice and garnish with chopped green onions and sesame seeds.

Notes

For added flavor, consider browning the beef in a skillet before adding it to the slow cooker, although it’s optional.
