- 1 pound Italian sausage
- 1 cup lentils
- 4 cups vegetable or chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 diced onion
- 2 cloves minced garlic
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a slow cooker, add the Italian sausage, lentils, broth, diced carrots, diced celery, diced onion, minced garlic, and Italian seasoning.
- Stir all the ingredients to combine them well.
- Cover the slow cooker and cook on low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
- About 30 minutes before serving, stir in the fresh spinach.
- Taste and season with salt and pepper before serving. Enjoy each warm bowl of this comforting soup!
