Description

Ingredients

  • 1 pound Italian sausage
  • 1 cup lentils
  • 4 cups vegetable or chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add the Italian sausage, lentils, broth, diced carrots, diced celery, diced onion, minced garlic, and Italian seasoning.
  2. Stir all the ingredients to combine them well.
  3. Cover the slow cooker and cook on low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
  4. About 30 minutes before serving, stir in the fresh spinach.
  5. Taste and season with salt and pepper before serving. Enjoy each warm bowl of this comforting soup!
