- 1 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 9 oz refrigerated cheese tortellini
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- Grated Parmesan cheese, optional
Instructions
- Brown the sausage in a skillet over medium heat until fully cooked, then drain excess grease.
- Add diced onion and cook until soft, about 3-4 minutes, then stir in minced garlic and cook for an additional minute.
- Transfer the sausage mixture to a slow cooker and add chicken broth, diced tomatoes, dried basil, and dried oregano; stir to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- Thirty minutes before serving, stir in tortellini, heavy cream, and chopped spinach, and cook until tortellini is tender and heated through.
Notes
For best flavor, use fresh spinach and drain sausage grease to prevent a greasy soup.
