- 1 lb ground beef
- 4 medium potatoes, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn (frozen or canned)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Shredded cheese (optional, for topping)
Instructions
- Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat.
- Layer the diced potatoes in the slow cooker, followed by the cooked ground beef, black beans, diced tomatoes, corn, chopped onion, and minced garlic.
- Sprinkle chili powder, cumin, salt, and pepper on top.
- Cover the slow cooker and cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
- If desired, sprinkle shredded cheese on top in the last 15 minutes of cooking.
