Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Shredded cheese (optional, for topping)

Instructions

  1. Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat.
  2. Layer the diced potatoes in the slow cooker, followed by the cooked ground beef, black beans, diced tomatoes, corn, chopped onion, and minced garlic.
  3. Sprinkle chili powder, cumin, salt, and pepper on top.
  4. Cover the slow cooker and cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
  5. If desired, sprinkle shredded cheese on top in the last 15 minutes of cooking.
