Ingredients

  • 1 cup coconut milk
  • 1/2 cup Thai peanut sauce
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Add the chicken to a slow cooker.
  2. Mix together the coconut milk, peanut sauce, lime juice, minced garlic, soy sauce, red pepper flakes, salt, and pepper in a separate bowl.
  3. Pour the mixture over the chicken, ensuring it is well coated.
  4. Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until the chicken is tender and fully cooked.
  5. Shred the chicken and stir it into the sauce.
  6. Serve over cooked rice or noodles.
