Instructions
- Add the chicken to a slow cooker.
- Mix together the coconut milk, peanut sauce, lime juice, minced garlic, soy sauce, red pepper flakes, salt, and pepper in a separate bowl.
- Pour the mixture over the chicken, ensuring it is well coated.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until the chicken is tender and fully cooked.
- Shred the chicken and stir it into the sauce.
- Serve over cooked rice or noodles.
