A hearty slow-braised beef roast drizzled with a sweet and tangy cranberry balsamic glaze, perfect for family gatherings.

- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup fresh or frozen cranberries
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 1 bay leaf
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Preheat the oven to 300°F (150°C).
- Pat the beef chuck roast dry and season with salt and pepper.
- In a large Dutch oven, heat olive oil and sear the beef on all sides for 4-5 minutes per side.
- Remove the roast and sauté chopped onion for 3-4 minutes, then add minced garlic and cook for 1 more minute.
- Stir in beef broth, cranberries, balsamic vinegar, brown sugar, rosemary, thyme, and bay leaf. Bring to a simmer.
- Return the seared beef to the pot, cover, and transfer to the oven.
- Slow-braise for 3 to 4 hours until fork-tender, checking liquid levels occasionally.
- Remove the roast, strain the liquid, and reduce for 10-15 minutes for a glaze.
- Slice the beef and drizzle with the cranberry balsamic glaze.
Notes
Make sure to sear the beef for added flavor and to monitor the liquid level during cooking.
