Description

A hearty slow-braised beef roast drizzled with a sweet and tangy cranberry balsamic glaze, perfect for family gatherings.


Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup fresh or frozen cranberries
  • 1 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 bay leaf
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Pat the beef chuck roast dry and season with salt and pepper.
  3. In a large Dutch oven, heat olive oil and sear the beef on all sides for 4-5 minutes per side.
  4. Remove the roast and sauté chopped onion for 3-4 minutes, then add minced garlic and cook for 1 more minute.
  5. Stir in beef broth, cranberries, balsamic vinegar, brown sugar, rosemary, thyme, and bay leaf. Bring to a simmer.
  6. Return the seared beef to the pot, cover, and transfer to the oven.
  7. Slow-braise for 3 to 4 hours until fork-tender, checking liquid levels occasionally.
  8. Remove the roast, strain the liquid, and reduce for 10-15 minutes for a glaze.
  9. Slice the beef and drizzle with the cranberry balsamic glaze.

Notes

Make sure to sear the beef for added flavor and to monitor the liquid level during cooking.
