Description

A comforting and creamy broccoli cheese soup that is easy to prepare and perfect for chilly days.


Ingredients

Scale
  • 4 cups Broccoli, chopped
  • 2 cups Cheddar Cheese, shredded
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Whole Milk
  • 2 tablespoons Unsalted Butter
  • Salt and Pepper to taste
  • Optional Toppings: Croutons, additional cheese, or olive oil

Instructions

  1. Wash and chop the broccoli into bite-sized florets. Set aside.
  2. Melt the butter in a large pot over medium heat.
  3. Add the chopped onion and cook for 4-5 minutes until translucent.
  4. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. Add the chopped broccoli and simmer for 10-12 minutes until tender.
  7. Remove from heat and blend the soup until smooth with an immersion blender.
  8. Return to low heat and stir in milk and cheddar cheese until melted.
  9. Season with salt and pepper to taste, then heat through.
  10. Serve hot, garnished with optional toppings if desired.
