Ingredients

- 4 cups Broccoli, chopped
- 2 cups Cheddar Cheese, shredded
- 1 medium Onion, finely chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable Broth
- 1 cup Whole Milk
- 2 tablespoons Unsalted Butter
- Salt and Pepper to taste
- Optional Toppings: Croutons, additional cheese, or olive oil
Instructions
- Wash and chop the broccoli into bite-sized florets. Set aside.
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and cook for 4-5 minutes until translucent.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the chopped broccoli and simmer for 10-12 minutes until tender.
- Remove from heat and blend the soup until smooth with an immersion blender.
- Return to low heat and stir in milk and cheddar cheese until melted.
- Season with salt and pepper to taste, then heat through.
- Serve hot, garnished with optional toppings if desired.
Notes
For best results, use fresh ingredients and adjust seasoning to taste. Can be customized with additional veggies or spices.
