Description

Delicious and versatile baked chicken meatballs made with parmesan and fresh herbs, perfect for family dinners or gatherings.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup fresh parsley, finely chopped
  • 1/3 cup breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1 egg
  • 1 tablespoon olive oil, extra virgin
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon chili powder

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, chopped parsley, breadcrumbs, parmesan, egg, olive oil, salt, black pepper, garlic powder, onion powder, and chili powder. Mix gently and roll into 12 meatballs.
  3. Place meatballs on the baking sheet, ensuring space between them. Bake for about 30 minutes or until cooked through and golden on the outside.

Notes

Serve with marinara sauce over pasta or as an appetizer with dipping sauce. They can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
