- 140 g all-purpose flour
- 1 tsp almond extract
- 50 g almond flour (finely ground)
- 70 g powdered sugar
- Powdered sugar for dusting (optional)
- 120 g apricot jam
Instructions
- Gather all your ingredients, ensuring butter and egg yolk are at room temperature.
- In a medium bowl, beat softened unsalted butter with 70 g of powdered sugar until light and fluffy.
- Add egg yolk and almond extract to the mixture and mix well.
- In another bowl, whisk together all-purpose flour, almond flour, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until well blended into a dough.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Roll out chilled dough to 1/8-inch thick and cut out shapes using a cookie cutter.
- Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes, or until lightly golden around the edges.
- Let cookies cool on a wire rack, then spread apricot jam on the solid cookies and top with the cut-out cookies. Dust with powdered sugar if desired.
