Ingredients

  • 1 egg yolk (room temperature)
  • 1/4 tsp salt
  • 140 g all-purpose flour
  • 1 tsp almond extract
  • 50 g almond flour (finely ground)
  • 70 g powdered sugar
  • Powdered sugar for dusting (optional)
  • 120 g apricot jam

Instructions

  1. Gather all your ingredients, ensuring butter and egg yolk are at room temperature.
  2. In a medium bowl, beat softened unsalted butter with 70 g of powdered sugar until light and fluffy.
  3. Add egg yolk and almond extract to the mixture and mix well.
  4. In another bowl, whisk together all-purpose flour, almond flour, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until well blended into a dough.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C). Roll out chilled dough to 1/8-inch thick and cut out shapes using a cookie cutter.
  8. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes, or until lightly golden around the edges.
  9. Let cookies cool on a wire rack, then spread apricot jam on the solid cookies and top with the cut-out cookies. Dust with powdered sugar if desired.
