Ingredients

  • 1 cup orzo pasta

  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink and opaque, around 3-4 minutes.
  4. Pour in the chicken or vegetable broth, lemon juice, and lemon zest. Stir to combine and simmer for 2-3 minutes.
  5. Add the cooked orzo to the skillet and gently toss everything together until well combined and heated through.
