- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink and opaque, around 3-4 minutes.
- Pour in the chicken or vegetable broth, lemon juice, and lemon zest. Stir to combine and simmer for 2-3 minutes.
- Add the cooked orzo to the skillet and gently toss everything together until well combined and heated through.
- Garnish with chopped parsley before serving. Enjoy!
