Description

A classic and delightful dish that’s easy to prepare and packed with savory flavors.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, scallions)
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Cook the shrimp until they turn pink, about 2-3 minutes, then remove and set aside.
  3. Sauté the mixed vegetables in the same skillet for 2-3 minutes until tender.
  4. Scramble the eggs in the empty space of the skillet until fully cooked.
  5. Combine the cooked rice, soy sauce, and minced ginger; mix everything thoroughly.
  6. Mix the cooked shrimp back into the skillet and heat through.
  7. Season with salt and pepper to taste, then serve hot.

Notes

For best results, use day-old rice to prevent mushiness. Consider adding variations like spicy jalapeños or pineapple.
