Quick and tasty Shrimp and Corn Fritters that are perfect for a snack, dinner, or sharing at parties.
Ingredients

- 1 cup sweet corn, drained
- 1 cup shrimp, cooked and chopped
- 1/2 cup all-purpose flour (or gluten-free flour)
- 1/4 cup cornmeal
- 1/4 cup green onions, chopped
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1/2 cup milk
- 1 egg
- Oil for frying
- Tangy remoulade (for serving)
Instructions
- In a large bowl, combine the sweet corn, chopped shrimp, flour, cornmeal, green onions, baking powder, salt, pepper, and paprika.
- In a separate bowl, whisk together the milk and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes each side.
- Remove from oil and drain on paper towels.
- Serve hot with tangy remoulade.
Notes
Don’t overmix the batter. Test oil temperature to ensure even cooking. Serve with tangy remoulade or tartar sauce.
