Description

Quick and tasty Shrimp and Corn Fritters that are perfect for a snack, dinner, or sharing at parties.


Ingredients

  • 1 cup sweet corn, drained
  • 1 cup shrimp, cooked and chopped
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup cornmeal
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/2 cup milk
  • 1 egg
  • Oil for frying
  • Tangy remoulade (for serving)

Instructions

  1. In a large bowl, combine the sweet corn, chopped shrimp, flour, cornmeal, green onions, baking powder, salt, pepper, and paprika.
  2. In a separate bowl, whisk together the milk and egg.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes each side.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with tangy remoulade.

Notes

Don’t overmix the batter. Test oil temperature to ensure even cooking. Serve with tangy remoulade or tartar sauce.
