Description

A simple and delicious one-pot pasta dish combining marinara sauce, cottage cheese, and short pasta, perfect for busy weeknights.


Ingredients

  • 12 oz short cut pasta
  • 3 cups marinara sauce
  • 2 cups cottage cheese
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic (minced)
  • 1 pound ground turkey
  • 1/2 pound sweet Italian sausage
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 3 cups baby spinach
  • Parmesan cheese (for serving)

Instructions

  1. Boil a large pot of salted water and cook the short cut pasta according to package directions until al dente. Drain and reserve 1 cup of pasta water.
  2. Blend the marinara sauce and cottage cheese until smooth.
  3. In a skillet, heat olive oil over medium heat and sauté diced onion until soft. Add minced garlic and cook until fragrant.
  4. Stir in ground turkey and sweet Italian sausage, cooking until browned. About 5-7 minutes.
  5. Add Italian seasoning, red pepper flakes, salt, and pepper. Mix well.
  6. Stir in the marinara and cottage cheese mixture and cook until hot.
  7. Add baby spinach and stir until wilted.
  8. Combine the drained pasta into the skillet, mixing thoroughly. Add reserved pasta water if the sauce is too thick.
  9. Serve in bowls, topped with Parmesan cheese if desired.

Notes

Taste and adjust seasoning as necessary. You may also add more vegetables if desired.
