- 1 cup unsalted butter (softened)
- 1 cup powdered sugar (sifted)
- 1 large egg white (room temperature)
- 1 ¾ cups all-purpose flour (sifted)
- ½ cup cornstarch (sifted)
- 1 teaspoon vanilla extract (optional)
- 1 pinch salt
- 6 ounces high-quality white chocolate (chopped)
- ½ cup heavy cream (heated to simmer)
- 2 tablespoons unsalted butter (for ganache)
Instructions
- Prepare the Dough: In a large mixing bowl, cream together the softened unsalted butter and powdered sugar. Beat until it is light and fluffy, about 3-5 minutes.
- Add the Egg White: Add the egg white and mix until well combined. Optionally, add vanilla extract for extra flavor.
- Mix Dry Ingredients: Sift together all-purpose flour, cornstarch, and a pinch of salt in another bowl. Gradually add this to the butter mixture and mix until a smooth dough forms.
- Chill the Dough: Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat the Oven: While the dough is chilling, preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll and Cut the Dough: Roll the chilled dough to about 1/8 inch thickness on a lightly floured surface. Cut out desired shapes with cookie cutters.
- Bake the Cookies: Place the cookies on the baking sheets and bake for about 10-12 minutes until lightly golden around the edges.
- Make the Ganache: Heat the cream until simmering, then remove from heat. Add chopped white chocolate and butter, stirring until smooth.
- Assemble the Cookies: Once cooled, turn half of the cookies upside down, spread a thin layer of ganache, and top with the other cookies.
- Set and Serve: Allow the assembled cookies to rest at room temperature until the ganache sets. Enjoy!

Store in an airtight container at room temperature for up to a week. Can refrigerate, but texture may change.
