Description

A comforting twist on traditional shepherd’s pie using baked potatoes, filled with ground meat and vegetables, topped with creamy mashed potatoes.


Ingredients

  • 4 large baking potatoes
  • 1 lb ground beef or lamb (or plant-based ground meat for a vegan option)
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup beef or vegetable broth
  • 2 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce the baking potatoes with a fork, rub with olive oil, and sprinkle with salt. Bake for about 45-60 minutes until tender.
  2. Add olive oil to a skillet over medium heat and cook the onion and garlic until softened.
  3. Stir in the ground beef or lamb and cook until browned. Drain excess fat if necessary.
  4. Add the mixed vegetables and broth, and season with salt and pepper. Allow it to simmer for 5-10 minutes.
  5. Once the potatoes are done, cut them in half lengthwise and scoop out some of the flesh, leaving a bit for structure.
  6. Fill the potato skins with the meat and vegetable mixture and top with creamy mashed potatoes.
  7. Return to the oven and bake for an additional 15-20 minutes until the tops are golden and heated through.
  8. Serve warm and enjoy your hearty, comforting meal!

Notes

For variety, consider adding cheese on top or using sweet potatoes instead of regular potatoes.
