Description
A comforting twist on traditional shepherd’s pie using baked potatoes, filled with ground meat and vegetables, topped with creamy mashed potatoes.

- 4 large baking potatoes
- 1 lb ground beef or lamb (or plant-based ground meat for a vegan option)
- 1 cup mixed vegetables (peas, carrots, corn, etc.)
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup beef or vegetable broth
- 2 cups mashed potatoes
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C). Wash and pierce the baking potatoes with a fork, rub with olive oil, and sprinkle with salt. Bake for about 45-60 minutes until tender.
- Add olive oil to a skillet over medium heat and cook the onion and garlic until softened.
- Stir in the ground beef or lamb and cook until browned. Drain excess fat if necessary.
- Add the mixed vegetables and broth, and season with salt and pepper. Allow it to simmer for 5-10 minutes.
- Once the potatoes are done, cut them in half lengthwise and scoop out some of the flesh, leaving a bit for structure.
- Fill the potato skins with the meat and vegetable mixture and top with creamy mashed potatoes.
- Return to the oven and bake for an additional 15-20 minutes until the tops are golden and heated through.
- Serve warm and enjoy your hearty, comforting meal!
Notes
For variety, consider adding cheese on top or using sweet potatoes instead of regular potatoes.
