Description

A comforting dish that combines the rich flavors of shepherd’s pie with hearty baked potatoes, perfect for any day of the week.

Ingredients

Scale
  • 4 large potatoes
  • 1 lb ground beef or lamb
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup mashed potatoes (prepared)
  • Olive oil

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C).
  2. Prepare the potatoes: Scrub the potatoes well, then poke holes in them with a fork. Rub them with a little olive oil.
  3. Bake the potatoes: Place the potatoes in the oven and bake for 45-60 minutes, or until they are tender.
  4. Cook the filling: While the potatoes bake, heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, cooking until they are softened.
  5. Add the meat: Stir in the ground beef or lamb, cooking until the meat is browned.
  6. Mix in the vegetables: Add mixed vegetables, vegetable broth, tomato paste, Worcestershire sauce, salt, and pepper. Let this simmer for about 10 minutes.
  7. Prepare the potatoes for filling: Once the potatoes are baked, carefully cut them in half. Scoop out a bit of the inside to make room for the filling.
  8. Fill the potatoes: Spoon the meat mixture into each potato half. Top with prepared mashed potatoes.
  9. Return to the oven: Bake again in the oven for an additional 15-20 minutes, or until the top is golden and crispy.
  10. Serve hot: Enjoy your Shepherd’s Pie Baked Potato while it’s warm!

Notes

Ensure to poke holes in the potatoes before baking to avoid bursting. Using high-quality meat enhances the flavor.
