A comforting blend of baked potatoes filled with seasoned meat and topped with creamy mashed potatoes.
Ingredients

- 4 large potatoes
- 1 pound ground beef or lamb (or a vegan substitute)
- 1 cup mixed vegetables (e.g., carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 2 cups mashed potatoes
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and prick them with a fork. Bake them in the oven for about 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ground beef or lamb (or vegan substitute) to the pan, cooking until browned.
- Stir in mixed vegetables, tomato paste, and vegetable broth. Season with salt and pepper. Allow to simmer for 10 minutes.
- Once the potatoes are cooked, slice them open and scoop out some of the flesh to make room for the filling.
- Fill each potato with the meat and vegetable mixture, then top with the mashed potatoes.
- Place the stuffed potatoes back in the oven for 10-15 minutes until heated through and the tops are slightly golden.
- Serve warm and enjoy!
Notes
For added flavor, consider adding cheese on top of the mashed potatoes before baking.
