Description

A delightful Shrimp Scampi Pasta Bake that combines shrimp with a creamy sauce and pasta for a comforting meal.


Ingredients

  • 12 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish and set aside.
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the shrimp to the skillet and cook until they turn pink, which takes about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using.
  5. Pour in the white wine or chicken broth and lemon juice, and let it simmer for 2 minutes.
  6. Lower the heat and stir in the heavy cream and half of the Parmesan cheese, mixing well. Allow this mixture to simmer gently for another 2-3 minutes.
  7. Combine the cooked pasta with the shrimp mixture in the skillet. Mix until the pasta is well-coated.
  8. Transfer the pasta and shrimp mixture to the prepared baking dish. Top with the remaining Parmesan cheese and sprinkle breadcrumbs evenly over the top.
  9. Bake in the preheated oven for 20 minutes or until golden and bubbly.
  10. Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.

Notes

Use fresh ingredients for best flavor. Adjust salt usage since Parmesan can be salty. Store leftovers in the fridge for up to 3 days.
